Glen and I seem to be on a brunch kick here lately, which isn’t a bad thing at all really. The other day we stumbled on a recipe for mini quinoa frittatas that we got off of another blog called 52 Kitchen Adventures. I would never have thought to put these ingredients together on my own. It turned out very yummy.
Of course we had to slightly alter the recipe…..we did bacon, green onion and mushrooms. Glen of course put hot sauce on his. He made it look so happy! I ended up topping mine with salsa.
Mini Quinoa Frittatas
Adapted from So Very Blessed
Makes 10-12 muffin sized frittatas
Preheat oven to 350°F. Line a muffin tin with liners (I used foil ones) or coat with non-stick spray.
Place quinoa and 1 cup of water in a small saucepan over medium heat. Bring to a boil and reduce heat. Simmer for 10-15 minutes, until grain is slightly translucent and water is absorbed. Remove from heat and set aside.
In a large bowl, whisk eggs, zucchini, cheese and onion together. Add in cooked quinoa and stir to combine. Add salt and pepper to taste. Spoon frittata mixture into the prepared muffin tin, filling each cup almost full. Bake for 20-25 minutes, until fully cooked through.
Yep, we made some farmers cheese. I found a kit for making cheese online. We read the directions before getting started so we wouldn’t screw anything up.
Turns out it was super simple to do. First off we had to heat a quart of milk to 185 degrees.
Next step was to mix the citric acid in half a cup of water. When the milk got to 185 degrees, you pour the citric acid mix to the milk.
This caused the milk to curdle nicely.
We then poured it into a colander lined with cheese cloth.
We added cheese salt, fresh cracked black pepper and chopped fresh rosemary to make the cheese super tasty. We wrapped it in parchment paper and set it in the fridge to cool before we devoured it.

Yesterday Glen and I did absolutely nothing. It was wonderful. Between reading, surfing the internet and watching television Petey and Lilly took turns snuggling with me on the sofa.
Even before our big move to Holden, my mean girl Lila has been harboring trust issues. She would not step up and come out of her cage. She doesn’t trust men at all, so Glen really doesn’t stand a chance with her. I would try to get her to step up but wouldn’t push it because I value my hands and she is such a vicious biter. A couple of days ago I decided to give it another try….and low and behold she stepped up. That first day we just stood by her cage and cuddled a little bit. The next day we ventured into the living room to the couch. She had a good time and acted like her old self.
Eva of course was out and about. She is such a dork.
Since both birds were out, we busted out the foot toys. Lila destroyed one, and had a good time doing so.
