Sunday Brunch

Sunday, Glen and I finally had some time together….before I had to go to work.  Since we love cooking together we decided to try out a new recipe, that we only sort of followed.  We made baked cheddar eggs and potatoes, courtesy of Taste of Home magazine. 

First we sauteed onion, garlic and jalapeno pepper in some olive oil.  Then we added frozen hash-browns and cooked them until they were almost done.

Then we stirred in some bacon…..because bacon make everything better!

We made little pockets in the hash-browns and cracked the eggs into them.

We put the whole thing in the oven and baked it for about 10 minutes when we then put cheese on top and put it back in the oven to melt.

We finished it off with fresh chopped tomato, green onion and cilatro.  We baked it a little too long because the yolks were hard, but it didn’t matter, it was still fantastic.
