Persimmons….What to do with them?
We have a few persimmon trees and they are all loaded with fruit. We are still waiting for them to ripen. If they aren’t ripe and you eat them, your mouth will feel like it is turning wrong side out. They are so very sour. I have never had anything made with persimmons. Last year a friend shared a recipe for persimmon pie cupcakes. Maybe this year is the year to give it a try.

A couple of years ago, I had a persimmon tree that my mother planted. For some reason it had a lot of fruit on it. When the fruit ripened, I gave it away to people who said they were delicious. I’ve never eaten a persimmon, and don’t know if I’ll ever try one.

Beth….If you remember Dad and Dan Piedimonte made a batch of Persimmon wine..Of course they forgot some sugar and it turned out to be 100 proof white lightning. So how about some persimmon wine?
